Cakes In A Jar

So what do I do after riding around on my sportbike for fun after work?  I bake a cake of course.  Ridiculous.

There is a bodega in Hoboken that has great prices on fruit.  Every once in a while I pick up two large boxes of strawberries and two boxes of blackberries for $8.  I like to mix them with non fat yogurt and granola for my breakfast.  I get sick of oatmeal.

I usually end up having too much fruit, so I got out some mason jars and baked some cakes in a jar.  I'm also finishing up my latest batch of chili where I used hot Hungarian paprika, so I was looking to have something sweet for dessert.

You just need flour, sugar, salt, fruit, and a few jars.

I added some flaxseed meal, to attempt to be somewhat healthy(er).  Mix everything together.

Coat the jars filled with fruit with everything.

Top with a nice heaping teaspoon of butter.

Bake for an hour until golden brown and the cake rises.

And you're done.  Let cool for 20 minutes.  So simple.

Top with cream and inhale.  I don't think I even chewed.  Save the rest in the refrigerator for later, although I probably could have eaten the rest.
